Potato Salad
8 cups water
1 tablespoon salt (for boiling the potatoes)
3 pounds potatoes (8 cups pealed, chopped in square, and cooked)
3 tablespoons grated onions or 1/3 cup chopped onions
3 tablespoons oil
1 tablespoon vinegar
1 cup mayonnaise
1/2 teaspoon salt (for the dressing)
1/8 teaspoon pepper
4 hard-boil eggs
1 cup pealed and chopped apples
1 cup chopped celery (optional)
In a small bowl add the grated onions, oil, vinegar, mayonnaise, 1/2 teaspoon of salt, and pepper. Mix well. Place in the refrigerator
for later or do it over night. In a large pot add the water with 1 tablespoon of salt. Peal potatoes and chop in square. Add to pot and
boil for 5 minutes or until potatoes are done. Drained the potatoes and rinse with cold water. Place the potatoes in the refrigerator
for 30 minutes. In a small pot, boil eggs. Peal eggs and place them in cold water. In a large mixing bowl, add the mayonnaise dressing.
Chop celery if using and add to bowl. Mash the eggs with a fork and add to bowl. Peal and chop the apples, add to bowl, and mix well.
Finally, add the potatoes to bowl and mix well. Place salad in the refrigerator and keep always cold.
